Healthy living is all around us, often times we do not see it, or find it too expensive or impossible to do, but in reality that’s not always the case. This past week, I got the opportunity to try new healthy recipes as part of the Gorton’s Seafood Challege 20 at 200 or less, 20 recipes all under 200 calories or less per servings. I chose two recipes and gave it a try, I did make a few modifications to suit me and my taste buds, but they were still healthy options:
Grilled Salmon Wrap with Fat-Free Tzatziki Sauce (click for recipe)
This recipe was really easy to make. I used whole-wheat wraps instead of whole-wheat pita, and I did not use olives, tomatoes or onions, instead I used avocados and the rest of the ingredients listed on the recipe. The Classic Grilled Salmon was easy to cook in my convention oven. I like that this recipe calls for the Classic Grilled Salmon instead of the lemon or other seasoned salmon, because the flavors from the other ingredients compliment the salmon very well. Tilapia Stuffed Peppers (click for recipe)
I loved this recipe, I love Tilapia fish, this was really awesome and super easy to make. I’ve never made stuffed peppers before, but I was definitely willing to give it a try. The recipe involves a few simple steps, and time wise it took a little longer to make, because cooking brown rice takes a longer time, but well worth the wait. The Signature Grilled Tilapia was perfect. Tasty, cooked to perfection on my convenction oven. Mixing the ingredients and stuffing the peppers was the best part, I made 4 large, well stuffed, peppers. Added a little hot sauce once it was done and I must say they were filling and divine.
